Tags disappear randomly

I use classic Outlook with Exchange 2019 and Android 14. On Android I filter the contacts thru tags.
Contacts have been unexpectedly disappearing from the app display for some time now. The reason is that the tags of the respective contacts were deleted.
I can't understand why the tags are being deleted at the moment.
I would like to get to the bottom of the cause and determine which apps have access to the contacts and when. It would be helpful to have a log that shows which apps or which device is accessing the Exchange. Is it possible to log this? Maybe what exactly will be done?

To better troubleshoot your problem , could you provide more useful information by answering the following questions?
1.What are the tags you mentioned? Are you using the caregory tags like in the picture below:
Could you please give us your screenshot?
2.If your answer to the first question is “yes”,then what client did you used to change the category ,Outlook for Windows or Outlook for Android?
3.Did you make any changes which might cause this issue?
And in my personal experience , only Outlook on the user's own device can access Outlook contacts, and no other app can access it.
